Planning a feast with loved ones and friends? Why not try a delicious lamb shoulder with our famous mint sauce to accompany. 


  1. Pick and set aside the freshly picked mint, parsley and oregano

  2. peel garlic and crush

  3. Place herbs, grapeseed oil, garlic, salt, and pepper into a food processor, blend until combined

  4. Add remainder of the olive oil and stir through to combine until smooth

  5. To serve, finish with chardonnay vinegar and season with some Maldon salt and freshly ground white pepper


  • Mint - 1 bunch (120g)

  • Parsley - 1/2 bunch (30g)

  • Oregano - 1/2 bunch (30g)

  • Garlic - 2 cloves

  • Salt (3g)

  • Pepper - 1 pinch

  • Grape seed oil (100g)

  • Olive oil (50g)

  • Chardonnay vinegar (30ml)
